Double Choc Chickpea Cookies


INGREDIENTS


1 x can chickpeas, drained and rinsed

1 x teaspoon raw cacao powder

1 x teaspoon true cinnamon powder

3 x tablespoons coconut oil

1/2 cup coconut sugar

1/2 cup organic dark chocolate chips

1 x teaspoon vanilla (optional)




METHOD


1. Pre-heat oven to 160 degrees.


2. Simply blend all ingredients together until thick and doughy like in a food processor.


3. Drop dough by heaped teaspoons onto a lined tray and use a fork or spoon to form the cookie shape.


4. Pop in the oven for 15-20mins or until they brown up nicely.
